The process begins with the recollection of blue tequilana weber agave anywhere between six and eight years of ripeness, meticulously chosen by our experts in order to obtain only the highest quality of rendered agaves which will be harvested by cropping the agave leaves or pencas by hand with a sharped-end tool or coa, leaving the heart of the agave plant or piña ready for transportation from the field to the patios before cooking in the stone ovens.

The hearts of the agave plant or piñas are kept in a low cooking heat, which will give the plant an even cook and will begin the conversion of carbohydrates into sugar, getting ready for fermentation, and are also softened to facilitate the extraction of the sugar in the extraction tandem. The stone oven holds the agave from 48-50 hours in order to get the perfect cook and proceed to squeezing.

The agave is placed on the extraction tandem to squeeze them and separate the bagasse from the honey called MOSTO or MUST (fresh must); the bagasse will be transported to compost and the honey to the stainless steel cistern where it will wait its turn for the next step, fermentation.

At this point, the sugar in the honey from the must will transform into alcohol. There is a small amount of active yeast and nutrients applied during this process, this way the microorganisms are put to work taking oxygen from the surface and the sugar from the must to the rhythm of classic baroque music; this transformation process takes around two hundred hours depending on the weather.

Once the microorganisms and the classical music´s job is done, it is time for distillation, which is done with a doble distilling; 1. for crushing and 2. for rectification. During the first process, the wilted must is put under distilling in a copper still to separate the useless ordinary alcohol, and during the second process, the ordinary alcohol is also distilled to obtain our very sought tequila.

Now, we must wait and be patient, our Tequila Plata is taken to rest in oak barrels under a humid environment, with controlled light and temperature in order to express its essence jointly with the wood for its distinct notes of scents and tastes.

All tequilas are filtered, tasted, quality supervised, bottled in our distinctive presentations which are created and painted by craftsmen from the Jalisco Highlands – Los Altos de Jalisco; and that is how our treasures are prepared and ready to delight your senses and cheer our consumer´s spirits.
